Adam Sobel recently learned that his last remaining vegan food truck would cease serving its award-winning tempeh and tofu when his permit expires at the end of February.
Acquiring permits can be quite difficult.
For instance, New York City has not issued a new permit since 1981 and hasn’t added names to its waiting list since 2007.
