Great idea! Here’s some things to consider.
1. Make sure you order enough trucks. A good rule of thumb is 60 – 75 people per truck. Have a few trucks that will serve a variety of food. In this way, your guests have the fun of choosing their meal and you don’t have long lines of folks waiting for food.
2. Consider your venue with respect to your city’s ordinances. While New York and Austin welcome food trucks, Chicago now has ordinances that prohibit them parking within 200 feet of brick and mortar restaurants and can only park for 2 hours at a time.
3. A recent trend is to have a food truck show up at the end of festivities. By this time the guests are hungry again after all that dancing! Plus, it gets them outside and they can further mingle while waiting for food.
